With Thanksgiving just around the corner, it’s time to start the holiday baking. And don’t forget the upcoming Christmas cookie exchanges – they make a lovely presentation and are sure to please.

Triple Chocolate Pecan Cookies
Ingredients:
- 1 1/4 cups plus 2 tablespoons all purpose flour
- 1/4 cup cocoa
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1/2 cup granulated sugar
- 2/3 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 cup chocolate chips
- 3/4 cup pecans, plus additional for garnish
- 11-ounce bag white chocolate bits or chocolate bark
Instructions:
Heat oven to 375 degrees. In a medium bowl, sift together the flour, cocoa, baking soda, and salt. Set aside. In a large bowl, combine the butter and sugars. With an electric mixer, beat until light and fluffy, scraping the sides of the bowl as needed. Reduce speed to low and add the egg and vanilla. Gradually add the dry ingredients and then mix in the chocolate chips and pecans.
On baking sheet, drop by tablespoon, 1 1/2 inches apart. Bake 8 – 10 minutes. Let cool on waxed paper. Once cool, melt white chocolate in microwave in 15 – 30 second bursts.
Dip cooled cookies in white chocolate and garnish with pecans. Let white chocolate completely set before storing.
